Raspberry, Cinnamon and Brown Sugar Waffles Recipe



I invited my little cousin over for a sleepover this weekend.  She started the 7th grade not too long ago and we needed some serious girl talk about the year so far!  We stayed up all night watching movies, eating lots of popcorn and of course gossiping!  In the morning I decided to make breakfast, I was scared I was going to wake her up, but nope, she was passed out on the couch.  I made my raspberry, cinnamon and brown sugar waffles and she loved them.  They are made with quick-cooking oats and fresh fruit so they are super healthy and keeps you full!  

1/2 cup of quick-cooking oats
1 cup of all-purpose flour
2 teaspoons baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 teaspoon of cinnamom
1/3 cup of brown sugar
1 egg
3 tablespoons of vegetable oil
1 1/3 cup of milk
1/3 cup of raspberries, thawed
Maple Syrup
Butter (optional)
Powdered Sugar (optional)

1.  Preheat your waffle iron according to the directions from the manufacturer's.

2.  In a medium size bowl whisk together all the dry ingredients.  Then add the wet ingredients, excluding the raspberries.  Stir until well combined.  Now gently fold in the raspberries.

3.  Now spoon the recommended amount of waffle batter (my waffles take about 1/3 cup of batter).  Be careful not to  overfill the waffle iron.  Close the top and then cook until the waffles is golden on both sides.  Remove add to serving plate and then top with maple syrup and butter.

Peach Coffee Cake Muffin Recipe



So, I went to the produce stand again and they had a huge brown paper bag of peaches for only $2!  Beat that Martin's, ha!  However, I now have more peaches than what I know what to do with!  So, I decided to get a little creative These muffins are light and moist unlike some coffee cakes that crumble.  The peaches in the middle provide a wow factor as soon as you take that first bite!  It's a perfect way to start your morning! 

1/2 cup of butter
3/4 cup of granulated sugar
2 eggs 
1 teaspoon of vanilla
2 cups of flour
2 teaspoon of baking powder
1 teaspoon of cinnamon
1 pinch of nutmeg
1/8 teaspoon of salt
1/2 cup of milk
1/4 of brown sugar
3 cups of sliced peaches, skins removed

1.  Preheat your oven to 350 degrees.  Cream the butter with the sugar until it is light and fluffy.  Add your vanilla and then add eggs, one at a time while continuing beating.  

2.  Start to add your dry ingredients to the batter, including the flour, baking powder, cinnamon, nutmeg and salt.  Slowly start to add your milk while beating on low.  

3.  Grease a cupcake tin with butter.  Add a few tablespoons of batter into the tin.  Sprinkle with brown sugar.  Add about three slices of peaches.  Add more batter.  Sprinkle with more brown sugar.  Repeat this process, this will make 12 muffins in total.

4.  Bake for 25 mintues.  Before removing the muffin make sure it is cooled off, if not the top portion may separate from the base.

California Omelet Roll Recipe


Try this recipe at your next brunch and it will surely be a hit with all your guests!  This is an alternative and healthy way to serve an omelet.  It bakes in the oven and you actually use the egg portion of the dish to wrap up fresh veggies, instead of using an expected tortilla.  I had all these ingredients still on hand from my Southwestern Salad I made last week!  

5 eggs
3/4 cup of milk
1/2 cup of flour
A few dashes of hot sauce
1/4 of a small white onion (chopped)
1 tomato, chopped
1 avocado chopped
1/2 cup of mexican blend cheese
2 Tablespoons of cilantro, plus extra for garnish
1 teaspoon of cumin powder
Salt and Pepper to taste
A dollop of sour cream (optional)

1.  Preheat your oven to 450 degrees

2.  Add the first four ingredients together in a blender or food processor and blend until smooth (this is a super easy way to incorporate the flour and ultimately add air bubbles which will create light fluffy eggs). Yum.   Pour this into a greased (I used vegetable oil) 13in x 9in x 2in glass baking dish. 

3.  Sprinkle the chopped onion onto the egg mixture evenly and place into oven for 18 minutes or until eggs are set.  While this is baking, use this time to cut up your fresh veggies and herbs.  Sprinkle cumin on top of your avocado and tomatoes while they are still on your cutting board.

4.  Take the eggs out of the oven and sprinkle the top with cheese.  Then top with the tomatoes, avocado and cilantro.  Add salt and ground pepper if desired now.  

5.  Using your hands and a spatula (so the egg does not tear) and start to roll up the omelet in the dish.  Place with seam side down on a serving dish and carefully slice pieces into 3/4 inch servings

6.  Serve with sour cream (if desired) and sprinkle some of the remaining chopped up cilantro on top

* Tip:  To ensure even pieces without the filling falling out, carefully cut the roll in half, then cut this until 4 pieces.
